Traditional Kerala Fish Curry Recipe Using Kudampuli (Malabar Tamarind)

Kerala fish curry is one of the most iconic dishes from the coastal kitchens of Kerala. Known for its rich color, bold spices, and tangy flavor, this curry gets its authentic taste from Kudampuli (Malabar Tamarind) and traditional clay pot cooking.
In this recipe, we will prepare a traditional Kerala fish curry using Kalimannu Tamarind (Kudampuli) and cook it in a Kalimannu clay pot to bring out the true flavors of Kerala cuisine.
Ingredients
• 500 g fresh fish (seer fish, sardines, or mackerel)
• 3–4 pieces Kalimannu Tamarind (Kudampuli)
• 2 tbsp coconut oil
• 1 tsp mustard seeds
• 2 sprigs curry leaves
• 8–10 shallots (sliced)
• 1 tbsp ginger (crushed)
• 1 tbsp garlic (crushed)
• 2 tbsp Kashmiri red chili powder
• 1 tsp turmeric powder
• 1½ tbsp coriander powder
• 2 cups water
• Salt to taste
Preparation
Step 1: Prepare the Kudampuli
Wash and soak Kalimannu Tamarind (Kudampuli) in warm water for about 10 minutes. This helps release its smoky and tangy flavor.
Step 2: Heat the Clay Pot
Heat coconut oil in a Kalimannu clay pot over medium heat.
Add mustard seeds and allow them to splutter. Then add curry leaves.
Step 3: Sauté the Aromatics
Add sliced shallots, crushed ginger, and garlic.
Sauté until the mixture becomes fragrant and slightly golden.
Step 4: Add the Spices
Add turmeric powder, chili powder, and coriander powder.
Stir gently and cook for about 30 seconds.
Step 5: Add Kudampuli and Water
Add the soaked Kalimannu Tamarind along with the soaking water.
Pour in the remaining water and add salt.
Allow the curry to come to a gentle boil.
Step 6: Cook the Fish
Carefully add the fish pieces to the curry.
Cook on low to medium heat for about 10–12 minutes without stirring too much, as the fish may break.
Step 7: Rest the Curry
Once cooked, turn off the heat and allow the curry to rest for at least 30 minutes.
This resting time allows the Kudampuli to release its full flavor into the curry, making it taste even better.
Why Use Kudampuli Instead of Regular Tamarind?
Unlike regular tamarind, Kudampuli has a deep smoky flavor that perfectly complements fish curry. It gives the curry its characteristic tanginess and rich dark color.
Using Kalimannu Tamarind ensures that the curry retains its authentic Kerala taste.
Why Cook Fish Curry in a Clay Pot?
Cooking in a Kalimannu clay pot enhances the flavor of the dish.
Clay pots:
• Distribute heat evenly
• Enhance spice absorption
• Preserve traditional taste
• Add a natural earthy aroma to the curry
Many Kerala households still prefer clay pots for fish curry because the taste improves significantly.
Serving Suggestions
Kerala fish curry pairs beautifully with:
• Steamed rice
• Kerala matta rice
• Kappa (tapioca)
• Appam or dosa
The curry often tastes even better the next day, as the flavors deepen overnight.
